The lentils of Altamura are IGP, meaning they are certified to have been cultivated there. These small green lentils are rich in protein, fiber, and iron and they alone are absolutely delicious. A short spaghetti was added to make a traditional lentil and pasta specialty found throughout southern Italy. Simply empty the package in 4 cups of boiling water, add some olive oil and stir until all the water is absorbed, add salt and pepper and serve hot! A delicious artisan preparation that is a complete meal in one pack.
