Quick Italian Bean Soup


  • 1 - 17oz. jar Sugo Ai Fagioli (pasta sauce with white beans)
  • 2 quarts chicken or vegetable broth
  • 1 small onion, diced
  • 1 pound zucchini, chopped
  • 2 cups baby spinach
  • Salt & pepper
  • Parmesan cheese for serving (optional)

Heat a bit of oil in a large pot over medium heat. Sauté onion with salt until translucent. Add zucchini and sauté a minute more. Stir in sauce and stock, simmer 10 minutes, or until zucchini is tender. Remove from heat and stir in spinach until wilted. Serve with grated parmesan.
